I want to set up a Q&A so that participants answering questions cannot see who wrote what answers, but I, as the admin, can see who wrote what answers - is this possible?

Is it possible to set up questions so that the other participants can't see the answer but the Admin who set up the survey can?

Yes, you can hide the results from your participants and you can see the results from the Admin view, or by exporting Poll Results per User.
