I have a Webex EA subscription with Slido enabled for all users. I know the Webex webinar can accommodate 5000 users for quiz but is it the same for Webex meetings?

yes that is the same for both. Even if you use Slido standalone you can still use quizzes only for up to 5,000 participants. There is a hard limit for this feature.
But in case you use multiple-choice poll it can handle more but it would be great if you can inform us about such use-case in advance via our contact us page: https://www.slido.com/contact as such requests need go through our team.
