How to create an average score based on 4 response categories (strongly disagree up to strongly agree) and excluding from the average score the 5th answer category ‘don't know’. So the participants can also see the average.

That is a really great question! At the moment there is not a way to include/exclude answer categories, I’m afraid. If you create a multiple choice poll with each category as an answer option you will see a percentage of how many of your participants voted for each option.
