You can hide the vote counter.  You can view more details here.

Participants/Names will show on the leaderboard but once you are done with the quiz questions, you can look at skipping the leaderboard by not revealing the leaderboard from your host mode.

Is there a way to extract the leaderboard without revealing it to everyone?

If you have a paid plan, you can export the leaderboard at any time.  Otherwise, when the poll is not active, you can click to view the leaderboard as seen here.
