I want to set up some polls so that participants answering them cannot see who wrote what answers. But only I, as the admin, can see who wrote what answers - is this possible?

Yes, you can. You can set your polls to hide the results from your participants. Then you can see the results from the Host view, or if you’re using a paid plan, you can export Poll Results per participant.
