If I purchase a professional edition and begin using it before the Engage one-time plan expires, is my subscription updated, implying that Engage has been upgraded to professional, or do I have two subscriptions, Engage and professional?

Each of your One Time Plans are completely separate from each other. So if you firstly purchased and Engage One Time plan and then wanted to purchase a second One Time Plan, this time a higher Professional Plan that will be completely separate and won't affect the first plan.
