You can absolutely do this. Just prepare both slidos as you normally would. You can then share access with people who will be administering slido in your place by inviting them as co-hosts. They will be able to run the slidos on their own, edit and add polls, etc. Keep in mind, that they would not be able to access slido settings, and they would only be able to access one slido at a time.
