Is it possible to only show the single top responses live on a poll? We plan to use the poll for audience members to vote for their favourite presentation. There will be 10 presenters so we only want to show the most popular so as not to embarrass any of the other presenters.

This is currently not possible. When Showing the Poll results, Slido will always show all of the options that were available to choose from. If you wanted to, you could easily keep the results hidden. Then simply announce the winner without ever showing the results to your audience.
