We have a full one day event under a professional subscription, with 5 sessions which we want to be able to save the q&a for. All people are in one room. Are we best to setup using labels, or as separate 5 meeting rooms, and deactivate/activate, etc? Are we able to setup this up to trial to make sure it is working how we want to it?

I would personally recommend using the multiple rooms, as it is less work for you and gives you a better overview of the individual sessions. You would only need to activate/deactivate the rooms, while with labels you would need to label all questions. But ultimately, it is all up to you and what works better for you.
