If I create a survey or poll in Slido, can I set the survey/poll access setting to private so that only I can see the results and prevent other users in my Slido org from seeing the results? I need to make sure the results are confidential and only visible to me.

you can hide the results from your participants as shown in this guide:
For the survey results are by default not shown at all unless you would decide to go through each question in the admin. You could also hide the results as shown in the guide above.
