there is not a direct option to hide the leaderboard in a quiz however there are some workarounds on how you can do it.
You could run the quiz and stop it from the host mode during running the last question - I would recommend testing this option so that you do not jump accidentally to the leaderboard at the end.
Another option would be running separate multiple-choice polls in which you can also mark a correct answer. Then you would export poll results per user and it would show how many correct answers someone got. That way you could evaluate who got the most correct points. This option does not allow you to calculate their speed.
